“Lunch Box Taco Bar” + 15 More Brilliant Ideas For Back-To-School

My “baby” Sten returns for his senior year(!!!) of high school on Wednesday, which I have a lot of mixed feelings about. On the one hand, I am so proud of him, and I know he’s going to have a great year. But on the other hand, I’m kind of going to miss having kids in school! But thankfully I have a few months to go before I have to start worrying about that. 🙂

This week, our back-to-school experience has been business as usual: registration, photo day, shopping for clothes and school supplies, etc. Since I have school on the brain, I decided to put together a roundup of bright ideas and inspiration for heading back to school!

First off, I want to share a cute idea I came across recently for a way to pack a tasty taco bar for lunch (that both kids and adults will love!)

Lunch Box Taco Bar

You’ll need:

  • Square food storage container
  • Cupcake liners (paper or silicone)
  • Taco fixings

If your tortillas don’t fit inside of your storage container, simply trim them up so they’ll fit inside. Place your tortillas at the bottom of the container.

Next, fill 4 cupcake liners with your preferred taco fillings, plus any fruits or veggies you’d like. We chose black beans, tomatoes, and cheese for our tacos, along with apple slices for a fruit.

Apple slices tend to brown a bit after being cut, but we discovered that the secret to keeping apple slices fresh for longer is soaking them for a few minutes in lemon-lime soda! We also included a mini cupcake liner to hold a bit of sour cream for our tacos, which we stacked on top of the cheese. You could fill yours with salsa, hot sauce, or whatever you’d like, really!

Place the liners in the container, on top of the tortillas, and secure the lid. Your taco bar is ready to go! 🙂

(Author’s Note: This works best if the container is being kept in a lunch box or fridge, or anywhere stable. If your container is going to be jostled around in a backpack or purse, you may want to swap the cupcake liners out for some small covered containers, or even some plastic condiment cups with lids.)
