I recently read somewhere that “dining in” is the new Date Night. This took me a little by surprise because while it’s definitely the case where we are concerned…I didn’t know that the concept was catching on.
In my case…by the time Friday night rolls around…I am ready to just put on comfy clothes and R E L A X! The thought of trying to figure out what to do, where to go and then competing with all the rest of the “date nighters” is not appealing in the least. Combine that with the fact that I find planning and preparing a delicious meal at home a true pleasure…and “date night” has a whole new meaning at our house. 🙂
Although last night wasn’t officially a “date night”…my husband and I did find ourselves home alone (a rare event indeed!) at the dinner hour. We had already been planning on cooking a couple juicy steaks on the barbecue (thanks to 4th of July meat specials at the grocery store!) but I wanted to try something different as a “side” than our usual baked potato.
I remember seeing this recipe for Parmesan Roasted Potatoes at Brown Eyed Baker awhile back and had “filed” it on my computer. Decided to try it out and I’m happy to share it was the perfect compliment to our lovely Rib Eye steaks!! REALLY delicious! (I may have dipped them in the ranch dressing that was on my salad….extra yummmmmy!)
Only variations from the linked recipe I tried were Lawry’s seasoning salt instead of paprika (I don’t even have paprika. I never buy it. I’m not really sure why.) Also, I always use foil in my baking pans now…I have Giada DeLaurentis to thank for that tip….makes clean up sooooooo much easier. But make sure you spray the foil with some non-stick spray before you put the potatoes on or you will have a super stuck-on mess. Learned that the hard way. Also, the part of the instructions about turning the potatoes for the last 10 minutes….uber important! Makes them perfectly crispy delicious!
So…this week when you are planning “date night”….keep the “dining in” option in mind along with these yummy Parmesan Roasted Potatoes!
