Finger Caesar Salad with Easy Homemade Dressing

Caesar salad is my favorite salad…but about the only time I’d ever eat it was at a restaurant because it always seemed like a lot of work to replicate at home. I’ve tried the store-bought Caesar dressings (and I’m not a fan) and making it from scratch wasn’t too appealing. Anchovies? I don’t think so! Plus, Caesar salad is best eaten immediately after being tossed and since I’m a super slow eater, this didn’t work for me either.

Well, recently I figured out how to overcome all these salad hurdles and now enjoy a Caesar salad anytime!

I found a simple and delicious Caesar salad dressing recipe (no fish-handling required!) and an even simpler way of eating my salad (at any pace I desire) — with my fingers!

My Favorite Caesar Salad Dressing

You can choose to mince fresh garlic, squeeze fresh lemons, and mash canned anchovies into a paste…but why would you? 🙂 This recipe is so easy and every bit as delicious!

  • 1 tsp. minced garlic
  • 1 1/2 tsp. anchovy paste (discovering I could buy this stuff next to the tuna fish was a game-changer for me!)
  • 1 tsp. Worcestershire sauce
  • 1 1/2 tsp. dijon mustard
  • 2-3 Tablespoons lemon juice
  • 1 cup mayonnaise
  • 1/2 cup freshly grated parmesan cheese
  • salt & pepper to taste

Whisk together the first 5 ingredients then add the cheese, salt and pepper and stir until well-combined. Store dressing covered in refrigerator up to 2 weeks.

To assemble your “finger” salad:  wash and trim hearts of romaine lettuce, separate into individual lettuce spears. Add croutons of choice and serve together with a small bowl of dressing. Dip and enjoy!

  • 1 cup mayonnaise
