I think that nearly everyone gets a little bit excited about food in miniature. Be honest with yourself – have you ever seen a mini version of a classic recipes and not immediately wanted to eat it? I sure haven’t! 😉 We gravitate towards comfort foods, and when we see those foods presented in an unexpectedly fun way, it’s hard to resist! That’s exactly what happened to me when I recently discovered this recipe for mini lasagna cups from Damn Delicious (one of my go-to blogs for great recipes).
Not only did I want to eat them immediately, but I also got to thinking about all the occasions you could make them for. These little lasagnas are baked into crispy wonton wrappers, which makes them portable enough to join a table of finger-food appetizers or hors d’oeuvres at any gathering. Additionally, their handheld size would most likely appeal to even the pickiest of kiddos. So whether you’re looking for party food or just want to eat something adorably miniature, you really can’t go wrong with these lasagnas! 🙂 Here’s how you can make them at home!
From Damn Delicious
- 1 Tbsp olive oil
- 2 Italian sausage links, casing removed
- 1 cup marinara sauce
- 1 1/2 cups ricotta cheese
- Kosher salt and freshly ground black pepper, to taste
- 24 2-inch won ton wrappers
- 1 1/2 cups shredded mozzarella cheese
- 2 Tbsp chopped fresh parsley
Heat a small amount of olive oil in a pot or pan over medium heat. Add the Italian sausage and cook until browned, crumbling the sausage with your spoon while it cooks. Drain the excess fat and stir in the marinara sauce.
Season the ricotta cheese with salt and pepper to taste.
Now, on to the assembly! Prepare a muffin tin by oiling it lightly or spraying with non-stick cooking spray.
Lay two wonton wrappers, slightly overlapped, into each cavity of the muffin tin. Press down carefully in the center and along the sides of the wrappers to make room for the filling.
Start by placing 1 tablespoon of ricotta into the bottom of each wrapper.
Then, add 1 tablespoon of the sausage and marinara mixture, and after that, add 1 tablespoon of mozzarella cheese.
Repeat the layers again (ricotta, marinara, mozzarella) in each wrapper.
Place the muffin tin in your oven to bake at 375 degrees for 10-12 minutes. You want the cheese to have melted and the wonton wrappers to be deliciously golden brown.
Remove the lasagnas from the muffin tin, and garnish with chopped parsley. Serve immediately, and enjoy!
