
I am one of those rare people that was born with a “salty tooth” instead of the much more common “sweet tooth.” When it comes to snacking, I’d much rather have a bowl of popcorn than a bowl of ice cream! That being said, I am not against enjoying sweets from time to time as well…especially when they are as healthy as they are delicious. That describes this recipe to a tee! As a matter of fact, I had just eaten dinner and had a piece of fresh peach pie when my daughter-in-law Kaitlyn made this plate of Apple Nachos and despite the fact I was very, very full…I could not stop eating them!

You’ve heard of Fruit Pizza…today we present you with Apple Nachos! I almost always have apples in my fridge and chocolate chips in my cabinet so it’s the perfect, convenient treat. Even my husband, who is very leery of “healthy” food, loves them! I’ve lost count how many times we’ve had them since Kaitlyn first made them. In fact, I’m polishing off of plate of them as I write this post. 😉

Apple Nachos
Ingredients:
- 2 medium Gala apples (Fuji or Granny Smith would be delicious as well)
- 1/4 cup strawberries
- 1/4 cup blueberries
- 2-3 tablespoons shredded coconut
- 2-3 tablespoons granola
- 2-3 tablespoons sliced almonds
- 1/2 cup chocolate chips
- 1 tablespoon coconut oil

Directions:
Start by slicing the apples – I like to cut them nice and thin. Toss the apple slices with some lemon juice or Fruit Fresh to keep them from turning brown. Then, slice the strawberries into bite sized pieces.

Next, melt your chocolate chips with the coconut oil. You can leave the oil out but it makes drizzling the chocolate much easier. Since I don’t have a double boiler I improvise with a pot and a glass bowl. You can also melt chocolate in the microwave. Just do it 10-15 seconds at a time, stirring in between, until it’s pouring consistency.

Now all you have to do is assemble the nachos! Start with a layer of apples and then drizzle on some chocolate. Continue this process until you use up all the apple slices. Add the strawberries and blueberries and some more chocolate. Top it all off with a sprinkle of granola, coconut, sliced almonds…and of course a little more chocolate 😉

Put the nachos in the fridge to chill for about 30 minutes or until the chocolate hardens. Now dig in and enjoy! These would make a great after school snack for the kiddos (assuming you don’t polish them off yourself before they get home!)

APPLE NACHOS

- Add the strawberries and blueberries and some more chocolate.
- Top it all off with a sprinkle of granola, coconut, sliced almonds…and a little more chocolate.
- Put the nachos in the fridge to chill for about 30 minutes or until the chocolate hardens.
