How To Use Meal Kits To Make Lunchtime Fast And Easy

It's just as convenient and affordable as eating leftovers, but with way more flavor and variety!

This post is sponsored by Blue Apron. As always, all opinions and ideas are entirely my own.

When it comes to bringing your lunch to work, it’s hard to beat leftovers in terms of speed and convenience. All you have to do is toss them in the microwave, and you’re ready to eat! But if you tend to cook a lot of the same meals at home, those leftovers can get boring in a hurry. So what’s the easiest way to add more variety to your home-cooked meals AND your lunchtime leftovers? That’s where Blue Apron comes in! Today I’ll be sharing how you can use the Blue Apron Family Plan to make your lunchtimes fast, easy, and most importantly, delicious! (And make sure check out the special discount from Blue Apron at the end of this post!)

How To Use Blue Apron To Make Lunch Easier

Blue Apron meal subscriptions provide all the ingredients you need to be able cook up several chef-created recipes every week. And while you likely won’t have a lot of leftovers on the 2-Person Plan, you can ensure you have plenty of food leftover for lunches by upgrading to the Family Plan! You can choose 2 to 4 recipes per week on the Family Plan, and each recipe makes 4 servings.

That means for each recipe you make, you and your spouse will get dinner that night, plus leftovers that you can both take for lunch the next day!

The Benefits Of Taking Blue Apron Meals For Lunch

There are plenty of ways you can benefit from taking Blue Apron leftovers for lunch. Here are a few of the reasons why it might be a good choice for you!

1. It’s Healthy

If you’re looking to make healthier choices at lunchtime, you can’t go wrong with any of the recipes from Blue Apron! Each serving falls between 500-800 calories, and all the ingredients are fresh and locally sourced.

2. It’s Convenient

Utilizing this system can make your weekly meal planning a lot easier! Just think, if you order 3 meals per week with your Blue Apron Family Plan, that’s 3 dinners AND 3 lunches for both you and your spouse that you don’t have to plan for! And not only do you not have to plan them, you don’t have to shop for them either.

You’ll get everything you need to make 3 dinners and 3 lunches delivered right to your doorstep. It doesn’t get much more convenient than that!

3. It’s Delicious

Even as leftovers, meals from Blue Apron make a delicious, interesting, and satisfying meal. That’s more than you can say about a fast food lunch, or about the ham and cheese sandwich that you might bring from home!

4. It’s Cost-Effective

Using meal kits can help you break the expensive habit of eating out for lunch. For the Blue Apron Family Plan at 3 recipes per week, you’ll pay about $11 per serving. It’s a bit more expensive than grabbing fast food, but definitely cheaper than a lot of other lunch options!

It may not be ideal for everyone, but if you’re busy, looking to stick to a budget, or simply want to try new things every week without having to hit up a bunch of restaurants, a meal kit delivery service for lunch is definitely worth considering.

How To Pack Your Meals For Lunch

Once you’ve cooked and eaten the first half of your Family Plan meal, how will you pack up the leftovers for the next day? For the most part, any food storage container you have on hand will do! But some meals have components that are better stored separately. For instance, one of the Blue Apron recipes I made recently was a Spring Pea & Mushroom Ramen with a Soft-Boiled Egg. I knew that the noodles and egg would both keep better if I stored them separately from the broth.

I ended up using a food storage container set (the Lunchblox Sandwich Kit) that made it so easy! It comes with a large sandwich-sized container, a medium-sized container, and two small containers. So I used the large one for the noodles, the medium one for the mushroom broth, and the small ones for the egg and some fresh scallions. This kit also comes with an ice pack that fits perfectly between the large container and the smaller ones. Everything snaps together and stays put!

Once you have your food packed away in containers, the last piece of the puzzle is to figure out what to put them in! There are a lot of great lunch bags out there these days, and they aren’t very expensive. I found several good options on Amazon, including this bag that is made of neoprene. It’s well-insulated, waterproof, and it’s machine-washable too! This lunch bag and and ice pack are all I need to keep my food nice and cold until lunchtime rolls around!
