
Happy Monday everyone! Can you believe that tomorrow is Christmas Eve? I really can’t! It’s all coming up so fast….but I’m excited! I love the time we spend as a family laughing, talking, relaxing, playing, and especially EATING! 🙂 I love all the traditions we have surrounding holiday meals. Ever since I married my Norwegian husband we have had Norwegian Meatballs on Christmas Eve….and the last several years we have added Norwegian Pancakes to our traditional Strawberry Waffles breakfast on Christmas morning. I make them gluten-free, but you can make them with regular flour as well. No other changes need to be made, just change out the flour.

Norwegian Pancakes
Ingredients
- 4 eggs
- 1/2 cup warm water
- 1 teaspoon vanilla
- 1/3 cup sugar
- 1/3 cup melted butter
- 1 1/4 cup flour
- 1 cup milk

Add eggs, water and vanilla to blender. Blend. Add remaining ingredients, blending after each addition until smooth.
Butter a saute pan or griddle with some butter. Heat pan to medium; then pour about 1/4 cup batter onto griddle (it is a very thin batter.) Let cook for about a minute then flip it and let it cook about another minute – do not overcook. Stack the crepe-like pancakes and keep in warm place until serving. The thing I love about this recipe is how EASY it is to make (just throw it all in a blender!) and how versatile they are.

You can serve them buttered and rolled with topping like a crepe….or you can “stuff” them with berries, bananas, nutella…the skies the limit! Some of our favorite toppings/stuffings are maple syrup, fruit syrup, brown sugar, powdered sugar, sliced strawberries, sliced bananas, and nutella. There’s a flavor and a way of eating them that pleases everyone in the family.

I personally like to stack them 8 or 10 high and eat them like a slice of cake! mmmm….mmmm.
