
I love grilled cheese sandwiches! They are easy to make and always delicious. Plus, my whole family loves them (try one on the best gluten-free bread, a family favorite) because they are also easy to customize. With all of the fabulous cheese and filling ideas I’ve found, I even decided to start a Pinterest board just for grilled cheese recipes!
I recently tried a a new grilled cheese variation from my friend Maria at Two Peas & Their Pod and it was SO delicious I just had to share with you! It starts with sourdough bread, a sweet fig jam, creamy brie cheese, and crunchy apple slices. Trust me on this one…you are going to want one for lunch (or anytime) TODAY!

Ingredients for 2 Sandwiches
- 1 Tablespoon olive oil
- 1/2 red onion
- 4 slices sourdough bread
- softened butter
- 2 ounces fig spread
- 1/4 pound brie cheese (you can cut away the wax coating, but you don’t have to!)
- 1 granny smith apple
- large handful of baby arugula

The first step is to caramelize the onions. Thinly slice half of a red onion while the pan and olive oil heat up over medium heat. Toss the onions in the hot oil, and toss them around for a few minutes, until they’re looking dark and caramely. 🙂

Set aside the onions while you assemble the sandwiches. Start with softened butter on one side of each slice of bread, and then spread about 1 tablespoon of fig jam on the other side of each slice.

Now layer thin slices of brie, thinly sliced apples, caramelized onion, and a bit of arugula.

Once your sandwiches are ready, heat a large skillet over medium-low heat. It may take a while, but the butter will burn really quickly if the pan is too hot, and you need a bit of time for the cheese to melt. Simply place the sandwiches in a warm pan and cook until the buttered bread is perfectly golden!

So simple, and so delicious! The brie and apples are a match made in heaven, and caramelized onions make everything taste better! This recipe would definitely impress family and guests but more importantly…your tastebuds!

- 2 ounces fig spread

- 1 granny smith apple
- 50 grams baby arugula
Instructions
- Caramelize the onions. Thinly slice half of a red onion while the pan and olive oil heat up over medium heat. Toss the onions in the hot oil, and toss them around for a few minutes. Set aside.
- Spread softened butter on one side of each slice of bread, and then spread about 1 tablespoon of fig jam on the other side of each slice.
