Single Serve Rice Krispie Treats! {Gluten-Free}

I’m pretty sure I have mentioned on more than one occasion what fans we are of Rice Krispie Treats in this house! We loved them before celiacs became part of our reality, and we love them even MORE now! When other cakes, cookies and treats have let us down, Rice Krispie Treats have been there for us….like a faithful, old friend. 🙂  As a matter of fact, whenever there is an occasion that involves a cake or other gluten-free goodie that my son Kell can’t eat, RKT’s are my go-to substitute.

So when I saw that my “treats in a cup” hero, Melissa at No. 2 Pencil, had done it again with Rice Krispie Treats for ONE…I could hardly contain myself!  Now instead of having to make an entire PAN of Rice Krispie Treats when I’m in need of a substitute for Kell, I can make a single serving. Better yet, HE can make it. 🙂  Thank you Melissa! You have just made my life a lot easier!

Here is the incredibly simple recipe:

Single Serve Rice Krispie Treats

adapted from No. 2 Pencil

Ingredients

  • 2 teaspoons of butter
  • 4 large marshmallows
  • 1 cup Rice Krispies cereal (the brown rice variety if you are going for Gluten-free)

Instructions

Add the butter to a small bowl and melt in the microwave, then add four large marshmallows to the melted butter and return to the microwave. Microwave on high for approximately 15 seconds.  Keep an eye on the marshmallows!  They will puff up quite a bit!  You don’t want them going overboard!

Take the bowl out of the microwave (the marshmallows will deflate) and stir the melted butter and marshmallows together with a spoon until well-combined.

Add the rice krispies and stir until all the cereal is coated in the sweet, sticky stuff.

Now you have a serious choice before you! You can either eat it with a spoon AS IS, or you can transfer to another small bowl (or a ramekin would work nicely too!), pop it out when it’s cool, and THEN eat! Your choice!

I hope you enjoy this new twist on an old favorite as much as I did!  I personally am grateful for this humble treat which has been around for 74 years…and hope it will be able around for at least 74 more.
