Super Healthy, Super Salsa!

There is something about summertime dining that immediately has me thinking of chips and salsa! Of course, I don’t have any problem with eating this delightful combo year-round, but when you can get fresh, local-grown ingredients from your garden or your local farmer’s market, it elevates chips and salsa to a whole new level! And when you give it a healthy spin on top of all that (which Britta manages to do here) it becomes downright irresistible!

Britta writes……..   My husband Neil and I go to the Farmer’s Market in our city nearly every Saturday during the summers. We love the selection of fresh, local produce, but we also love checking out the great products that local businesses bring to sell. One such product we have fallen in love with is a Tomatillo Avocado Salsa from a company called Miracle Salsa. The name comes from the fact that they include health-promoting ingredients in each of their salsas.

I didn’t read the label to discover that information until after we had devoured the whole container in one sitting. Seriously, it was THAT good. I was instantly game to try and recreate the salsa, because I loved the idea of a delicious snack that is good for your health (not to mention that Neil was already groaning that we would have to wait a WHOLE WEEK to get another container).

So that is how I came up with this homage to their salsa, which I am calling “Super Salsa!” Not only is it crazy delicious, but it also contains three different “superfoods” that are beneficial to your health: apple cider vinegar, raw honey, and raw garlic.

In a nutshell:

  • Apple cider vinegar is rich in antioxidants, which can slow the development of certain cancers. It also has antibacterial properties which contribute to improved cardiovascular health and blood pressure.
  • Honey possesses anti-bacterial and antioxidant properties that can improve your digestive processes and boost immunity.
  • Garlic contains more than 100 biologically useful chemicals that can do everything from lower cholesterol to fight off viruses.

Obviously these 3 ‘ingredients’ got some good stuff going on…not to mention the fact that they make this salsa DELICIOUS! I rest my case for doing this post. 🙂

“Super” Salsa

Ingredients:

  • 1 lb. tomatillos, wrapper removed and rinsed
  • 1 white onion
  • 4 cloves garlic
  • 1 jalapeno
  • 1 large handful cilantro
  • 2 tsp. salt
  • 2 avocados
  • 2 Tbsp. lime juice
  • 3 Tbsp. apple cider vinegar
  • 3 Tbsp. raw honey

Add the tomatillos, onion, garlic, jalapeno, cilantro, and salt to a blender or food processor.

Pulse until the tomatillos are broken up, and then blend until all ingredients are finely chopped and well incorporated. Pour the mixture into a medium-sized bowl.

Scoop the avocados into the bowl, and mash them into the mixture. You can choose to add them into the blender in the first step, but I like to have little chunks of avocado throughout the salsa, so I used a potato masher to incorporate them in.

Finally, add the lime juice, ACV, and honey. The amounts I have in the recipe create a nice balance between the sweet and tangy flavors of the vinegar and honey, but if you prefer things a little sweeter, simply use one less tablespoon of vinegar. If you like it a little LESS sweet, cut back on the honey.

Mix well and enjoy!
