How to Make Quick and Easy Breakfast Quesadillas In a Waffle Maker

I’m somewhat of a connoisseur when it comes to simple breakfast recipes. It kind of comes with the territory when you’ve been serving breakfast to at least some of your kids before school, every morning for almost 2 decades. (Yikes!) It’s always nice to have a breakfast that you can partially prepare ahead of time. When the morning comes around and kids are searching for school books and clean socks, all you need to do to get breakfast on the table is assemble some ingredients and get it cooked.

So when I came across this genius idea for breakfast quesadillas, I was immediately very upset that I didn’t know about it all those years ago! But I figured that by sharing it with you, I could at least put it to good use now. 🙂

You could make this breakfast extra easy to make on a busy morning by pre-cooking the scrambled eggs and bacon. Just make both the night before (maybe even double what the recipe calls for, so you can make it again later on,) and put them in a storage container in the fridge. In the morning, all you’ll have to do is get out your waffle maker, and breakfast will be on the table in no time!

“Waffled” Breakfast Quesadillas

Ingredients:

  • 6 eggs, scrambled and cooked
  • 12 slices bacon, cooked
  • 1 1/2 cups shredded cheese
  • (4) 8-inch tortillas
  • Oil or cooking spray

Directions:

Start by greasing your waffle iron, either by brushing it with oil or spraying it with cooking spray. Make sure to coat both sides of your waffle iron, and plug it in so it can start warming up to a medium heat setting.

When the iron is warm, lay one tortilla on the waffle iron.

Spread cheese over one-half of the tortilla.

Add scrambled eggs and 3 of the pieces of bacon on top of the cheese.

Fold the tortilla and close your waffle iron. It won’t shut all the way, so just set the lid down as far as it will go.

Cook the quesadilla on medium heat until the outside of the tortilla is golden brown, the cheese has melted, and the eggs and bacon have been warmed through.

Serve with salsa, sour cream, or any other quesadilla fixings your family loves.
